I hope that summer is treating you well! I love the feeling of rejuvenation and connection that I get in the summertime. In our part of the world Summer marks the half-way point of the year. This made me stop and think the other day about those New Year’s Resolutions.
Jicama is a tuberous vegetable, it looks sort of like a smooth round potato, or a brown rutabaga or turnip. They can be quite large, with bark-like skin, but on the inside they bright white, crunchy and juicy with a sweet and nutty flavor. Jicama tastes like a savory apple.
Spring is for asparagus. This seasonal treat is now available in the produce aisles and if your lucky in your own backyard! I planted some asparagus last spring and this year I got two whole stalks. I’m going to be patient though, asparagus is a perennial so as the plant gets bigger so will my crop and I’m looking forward to fresh asparagus for years to come!
