Chicken Salad

This simple chicken salad is a real crowd pleaser. It’s a favorite addition at wedding or baby showers.

Chicken Salad

Ingredients

3 cups cooked chicken, diced

1 cup celery, chopped

¼ cup green onion, sliced

1 cup avocado mayonnaise or Greek yogurt (our favorites are Chosen Foods or Primal Kitchen mayo or CoYo natural coconut yogurt) find these brands online or at your local Natural Grocers or Whole Foods Market

Juice of 1 lemon

¼ tsp. salt

Fresh ground black pepper, to taste

1 cup grapes cut in halves or quarters

1 cup unsalted roasted cashews, optional

Serve with lettuce leaves

Instructions

Cook the chicken, boil or roasted. Allow to cool and cut into bite-sized pieces.

In a large mixing bowl combine the chicken, celery, green onion, mayo/Greek yogurt, lemon juice, salt and pepper. Stir until combined.

Just before serving stir in the grapes and cashews.
