Avocado Salad

This salad is super easy just dice, mince, drizzle and toss and you have a delicious main course or a colorful side dish to compliment just about any meal.

Check out all the goodness in these ingredients:

Avocado: An excellent source of healthy fats including oleic acid. Oleic acid is rich in antioxidants that help remove toxins from the body, helps boost memory and immune function and increases cardiovascular health.

Cucumber: High fiber and high water content aid the body in eliminating toxins from the digestive system. Consuming cucumbers daily can be a great remedy for constipation because cucumbers are rich in magnesium and other hydrating electrolytes to help keep you regular.

Tomatoes: Have an outstanding amount of antioxidants, especially lycopene. Lycopene has been shown to guard against osteoporosis. Tomatoes also support healthy heart function.

Parsley: The volatile oils in parsley have been shown to inhibit tumor formation and neutralize particular types of carcinogens including those in cigarette smoke and charcoal grill smoke. It is also an exceptional source of vitamin C to help boost the immune system.

Lemons: One lemon provides about half of the recommended amount of vitamin C per day. Vitamin C plays a major role in the health of your immune system and helps prevent infections as well. Vitamin C also supports healthy skin, teeth, gums and blood vessels.

Extra Virgin Olive oil: A naturally healthy fat. Consuming extra virgin olive oil is linked to lower rates of inflammation, heart disease, depression, dementia and obesity.

Avocado Salad

Ingredients

Scale

2 avocados peeled and diced

1 medium cucumber, diced

1 cup grape tomatoes, halved

¼ cup fresh parsley, minced

Juice of 1 lemon

½ cup extra virgin olive oil

Sea salt, to taste

Fresh ground pepper, to taste

Instructions

In a large serving bowl combine the diced avocado, cucumber, and tomatoes.

Sprinkle in the minced parsley.

Drizzle in the lemon juice, olive oil and the sea salt and pepper to taste.

Gently toss.

Serve immediately or chill in the refrigerator.
