Red Potato Salad

This is a creamy delicious potato salad that is full of flavor and good-for-you ingredients.

Red Potato: Good source of Vitamin C, Fiber and Vitamin B6 which is beneficial for cardiovascular health and brain and nervous system function. Warning: Buy ORGANIC! Red Onion: Excellent source of cancer-fighting free radicals. Onion has anti-bacterial and anti-inflammatory properties. Red onions are also rich in chromium. Chromium helps control glucose levels.
Parsley: the volatile oils in parsley have been shown to inhibit tumor formation and neutralize particular types of carcinogens including those in cigarette smoke and charcoal grill smoke.
Greek-Style Yogurt: Choose organic, plain, full-fat yogurt from cow milk or coconut.
Flax Seeds: High in Essential Omega-3 fatty acids. These healthy fats are beneficial to heart health. Whole flax seeds and red onions are an excellent source of prebiotic fiber.

Red Potato Salad

Ingredients

3 Pound Organic Red Potatoes

1/2 Cup Red Onion, Minced

1/2 Cup Fresh Parsley, Minced

1 Cup Greek Style Plain Yogurt (dairy or dairy-free based on your preference)

2 Tablespoon Whole Flax Seeds

1 Teaspoon Sea Salt

Fresh Ground Pepper T Taste

Instructions

Cut potatoes into bite-sized cubes. Place in a steamer and steam until tender, about 20 minutes.

Remove steamer from burner, uncover and allow potatoes to cool slightly, about 10 minutes.

While potatoes are steaming prepare the remaining ingredients.

In a large serving bowl combine the potatoes, red onions, parsley, flax seeds, sea salt and pepper.

Gently toss until thoroughly mixed together. Serve immediately while slightly warm or chill if desired.
