Zesty Beans & Rice

Ingredients

4 cups cooked brown rice*
1 can beans, rinsed and drained (any type you like)
1 tbsp. coconut oil
1 medium onion, chopped
1 red pepper, diced
2 cloves garlic, minced
1 1/2 tsp. cumin
1 1/2 tsp. dried oregano
1 tsp. sea salt
1/2 tsp. cinnamon
2 Tbsp. raw apple cider vinegar
Instructions
Heat a skillet over medium heat.
Melt the coconut oil and saute the onion, red pepper and garlic.
Stir in the cumin, oregano, salt, cinnamon and vinegar. Saute for two more minutes to combine flavors.
In a large bowl combine the rice, beans, and sautéed mixture.
Notes
*You could also use quinoa or millet.
