Winter Citrus Salad

This salad is light and refreshing and full of immune boosting vitamin C, digestive boosting fiber, electrolyte balancing potassium and hydrating water. Enjoy it for breakfast or as an afternoon energy boosting snack.

Winter Citrus Salad

Ingredients

Scale

1 grapefruit

1 navel orange

2 clementines

1 Tbsp. olive oil

1 tsp. raw honey

45 fresh mint leaves

2 Tbsp. raw cashew pieces

Pinch of sea salt, optional

Instructions

Prepare the Honey Mint Dressing

Finely mince the mint leaves.

In a small bowl whisk together the olive oil and honey.

Stir in the minced mint leaves and allow to sit while you prepare the citrus salad.

Citrus Salad

Cut the grapefruit in half width-wise and cut out sections and place in a small mixing bowl along with any juice.

Slice the orange width-wise into 1/4″ wheels.

Separate the sections from the rind and place in the bowl with the grapefruit.

Peel clementines, cut in half width-wise. Separate sections and place in the bowl with the grapefruit and orange.

Add the cashew pieces and toss in the honey mint dressing. Add a pinch of sea salt to enhance flavors.
