Peach Cobbler

This is a delightful dessert on a crisp fall evening or if you have peaches in the freezer you can make it anytime of the year. I love to serve this with a scoop of So Delicious brand vanilla bean coconut ice cream.

Peach Cobbler

Ingredients

4 cups sliced peaches, fresh or frozen

¾ cup coconut sugar

1½ tsp. cinnamon

¼ tsp. nutmeg

1 tsp. fresh lemon juice

½ cup brown rice flour

¼ cup millet flour*

½ cup butter softened

½ cup oats

¼ tsp. salt

1 tsp. baking powder

½ tsp. baking soda

½ cup raw pecans, chopped (optional)

1 cup milk, plain almond or coconut

Instructions

Preheat oven to 350° Prepare a 8″ x 8″ baking dish by greasing with coconut oil or butter.

For the Filling:

In a bowl combine the peaches, ¼ cup coconut sugar, cinnamon, nutmeg, and lemon juice.Pour into prepared baking dish and bake 10 minutes.

While fruit mixture is baking prepare the cobbler batter.

For the Batter:

Combine the remaining brown rice flour, millet flour, butter, oats, 1/2 cup coconut sugar, salt, baking powder and baking soda.Stir in pecans if desired.

Add milk and mix together until just blended.

Spread cobbler batter over the peach mixture, cover all the peaches and bake for 45 more minutes.

Remove from oven, allow to set for 15 minutes before serving.
