Coconut Milk Chia Pudding

Ingredients

1/2 cup Unsweetened Coconut Milk (from the carton)⁠
2 tbsps Chia Seeds⁠
1 tsp Maple Syrup⁠
1 tsp Vanilla Extract⁠
1/2 cup Strawberries⁠
1 1/2 tbsps Nut or Seed Butter⁠

Instructions

Pour ingredients into a pint jar and mix well. Let settle for 2-3 minutes then mix again very well until you see no clumping.⁠

Cover the jar and store on the counter overnight or for at least 3 hours. After that, you can store it in the fridge. (The chia seeds will absorb the liquid much better if they are at room temperature.)⁠

You can add the nut butter and berries to the jar, replace the lid, and store in the fridge. take on the go, or pour into a bowl and enjoy!⁠
