Oatmeal Breakfast Bars



¼ cup raw honey

¼ cup pure maple syrup

¼ cup coconut oil

½ cup milk (any kind)

2 eggs

1 tsp. vanilla

½ cup organic unsweetened peanut or almond butter

¼ tsp. salt

1 tsp. cinnamon

¾ cup shredded coconut, unsweetened

½ cup chopped pecans, optional

2½ cups rolled oats

¼ cup almond flour


Preheat oven to 350° Prepare a 9€x13€ baking dish by coating with coconut oil.


In a medium sized mixing bowl cream the honey, maple syrup and coconut oil. Add the milk, eggs, vanilla and peanut butter and cream together.


Add in the salt, cinnamon, ½ cup of the shredded coconut, ¼ cup of the chopped pecans, oats and almond flour.


Spread dough onto prepared baking dish and sprinkle with remaining coconut and chopped pecans. Bake for about 15-18 minutes.
