1/2 cup Unsweetened Coconut Milk (from the carton)
2 tbsps Chia Seeds
1 tsp Maple Syrup
1 tsp Vanilla Extract
1/2 cup Strawberries
1 1/2 tbsps Nut or Seed Butter
Pour ingredients into a pint jar and mix well. Let settle for 2-3 minutes then mix again very well until you see no clumping.
Cover the jar and store on the counter overnight or for at least 3 hours. After that, you can store it in the fridge. (The chia seeds will absorb the liquid much better if they are at room temperature.)
You can add the nut butter and berries to the jar, replace the lid, and store in the fridge. take on the go, or pour into a bowl and enjoy!
