Sweet Potato Fries

Sweet potatoes are simply delicious, but sweet potatoes fries seem to make me feel all warm and cozy inside- yep, they’re a comfort food for me for sure!

Sweet potatoes have a ton of vitamin B6. Low levels of vitamin B6 have been associated with symptoms of depression, so maybe that’s why they make me feel so good.

Sweet Potato Fries

Ingredients

3 Tbsp. avocado oil

2 sweet potatoes, sliced into 1/4 inch strips

1 1/2 Tbsp. arrowroot powder

Instructions

Preheat oven to 425ºF and line baking sheet(s) with parchment paper.

Prepare the sweet potatoes by either washing skin and patting to dry or peeling skin. Then cut into 1/4 inch stips.

Place the avocado oil and the sweet potato strips in a large bowl and gently toss. Sprinkle in the arrowroot powder and toss until potatoes are coated.

Arrange the strips onto your baking sheet(s), being careful not to crowd the pan or overlap the potatoes and bake for 25 to 30 minutes, flipping halfway through.

Season with salt if desired, and let cool slightly before serving. Enjoy!

Notes

Substitute avocado oil for melted coconut oil.

Substitute arrowroot powder for tapioca powder.
