1/4 cup brown rice flour
1/2 cup millet flour*
1/4 cup oat flour*
1/2 cup almond meal
1 tsp. baking powder
1 tsp. Baking Soda
1/4 tsp. sea salt
1 egg
1/4 cup coconut oil, softened
1/3 cup honey
1/2 cup unsweetened apple sauce
1 cup apple pie filling
Preheat oven to 350 degrees and prepare muffin tins with paper liners.
In a mixing bowl, stir the dry ingredients together.
*Grind whole oats and millet in a coffee grinder to make flour.
In another bowl combine the egg, vanilla, honey, coconut oil and apple pie filling.
Add the liquid mixture to the flour mixture and stir together until just combined.
Pour into prepared muffin tins and bake 18-20 minutes.
